Canary Islands 25–26
The winery has existed for 250 years. It has wine tanks and collects the grapes at the end of June or the beginning of July, and they do some experiments. Only the tractor spreads fertilizer; everything else is done by hand.
They have one harvest per year, both for the experiments and for the wines. The harvest experiences very hot weather and little rain—from November until February. From then on, the vines grow in the same temperature, and we cut and collect them in other seasons.
In the first year they cut them twice: once in April and once in October. Now they cut them once a year.
They make compost from above, and it has small organisms and bacteria that are not good for the vineyards. The tractor cannot enter if there are no small pathways. The compost needs…
The difference is that in the top picture it is older, and in the bottom picture it is newer. In the top one it is after April, and in the bottom one it is after February, so the soil can warm up enough for the eruption. The lava solidifies, and the walls are like knives—we have stable ground because of the lava.
In the photo I will show you, there are vineyards, and because of that we cannot see the ground, which is lava underneath.
